walnuts in shells

I love walnuts.

Walnuts are really, really good for you.

Here are just some of the health benefits:

  • Walnuts contain nearly twice the amount of antioxidants as an equivalent amount of any other commonly consumed nut.
  • Walnuts are a great source of Omega-3, essential for brain health and can help with mood issues.
  • Walnuts contain melatonin, which can help you sleep better.

But, a lot of people don’t eat walnuts because of how they taste. Walnuts, especially raw walnuts, can have a bitter taste that turns some people off.

If you have been avoiding walnuts because of their flavor, try this recipe for an awesome-tasting walnut snack to help you get your dose of walnuts every day.

Rosemary Walnuts

Ingredients:

2 tablespoons unsalted butter (substitute: Extra Virgin Olive Oil or Coconut Oil)

1 tablespoon minced fresh rosemary

1/2 rounded teaspoon salt

1/2 teaspoon cayenne (or other spicy pepper)

2 cups walnuts (pieces or halves)

Preparation directions:

Melt 2 tablespoons unsalted butter in a small pan over low heat and stir in 1 tablespoon minced fresh rosemary, a rounded 1/2 teaspoon salt (fine sea salt is best), and a scant 1/2 teaspoon cayenne (use a full 1/2 teaspoon if you love the heat).

Drizzle the seasoned butter over 2 cups walnut halves or pieces (halves are pricier so I usually use pieces) and toss well. Spread the coated nuts out on a rimmed baking sheet and bake in a 350°F oven until golden on the inside, 10 to 15 minutes.
